Delicious chicken recipe, with subtle flavors of cinnamon, garlic and oregano blending to create a savory taste. My Greek family made this for me, and we all enjoyed the hand made egg noodles topped by the tasty sauce made from peppers, onions and tomatoes with the signature spices. Find a good greek wine to go with it and you are all set!

Why is this recipe great? What’s its backstory? 

Roti dishes are known for their deep flavors. The thing I love about this recipe is how the chicken and kousenband taste is so distinct, although they are cooked
with the same base of onion, garlic, and tomato. I am a huge fan of spicy food,
so the heat that comes from the hot pepper with the chicken is very gratifying.
This dish is eaten with your hands, tearing the roti pancake into small pieces and
picking up the chicken and vegetables. The garlic and masala encrusted egg is
wonderful for presentation and is a nice subtle taste paired with the chicken and
vegetables.

Masala Chicken Bread

Why is this recipe great? What’s its backstory? 

I really like bread and testing different bread roll recipes. I have come to really enjoy the versatility of the Turkish Pogaca dough. The yogurt in this dough makes the bread nice and soft. Here I have taken a slightly spicy chicken mixture as a filling in making a stuffed bread. This recipe will make 2 large or 3 medium sized breads. This can be enjoyed with tea or eaten as a meal with a nice salad on the side!

Chicken Meatball Soup

Why is this recipe great? What’s its backstory? 

I was desperate to use up the crumbs from a bag of pizza dough crackers (so salty and delicious), so I started thinking about recipes that would involve meatballs… that day we went shopping and found minced chicken (relatively unusual for Belgium!) so we snatched it up, and threw together this soup. It has now become on regular rotation at our house. It’s so deep in flavour, if you do have the Parmesan rind don’t skip it, the broth becomes liquid gold. This soup is also very versatile, I have purposely not put amounts because you can really work with what you have, or what combination of vegetables you prefer.
