Why is this recipe great? What’s its backstory? 

I originally made this recipe to bring along to a house party in the Lakes District to celebrate a dear friend’s 60th birthday. They were so well received, they have become a holiday staple, taking them along to other friends’ family Boxing Day open house or one of the many different types of cookies I make just for us at home during Advent. They make for a refreshing change from the incessant chocolate!

Chocolate Chip Cookies – 3 Variations on a Theme

Why is this recipe great? What’s its backstory? 

My husband loves chocolate and is a snack-a-holic, particularly for sweet stuff. But he’s not a great fan of nuts, except in exceptional circumstances. So the traditional Toll House Chocolate Chip cookie, which I prefer to make with pecans, has less appeal for him. Hence, I’m forever on the look-out for chocolate chip cookie recipes and these three have received 5 stars from my sweetheart.

Why is this recipe great? What’s its backstory? 

Christmas is a big deal in our house. I used to Christmas elf/or nisse (how the Danes would say) my friends at MHC, played Krampus for the German language club, and shared the German tradition of advent with my friends. When I met my Danish husband and he told me he was atheist, my reply was, him not believing in God was not an issue, but Santa Claus and the Easter Bunny, I’m afraid, were non-negotiable (both not traditions in his family). Every week during the COVID-19 pandemic we have been hosting a Virtual M&Cs, where alums from all around the world can gather to share how their weeks’ have gone and have discussions on topics that interest the group. With each week’s facebook reminder, I always post a cookie recipe that people can make at home. We had lovely feedback from both people who joined the M&Cs and those who tried the recipes on their own that this shortbread recipe was delicious, so I wanted to share it with all of you. Enjoy!

Chocolate Heath Bar Crunch Cookies

Why is this recipe great? What’s its backstory? 

This recipe originally started some years ago on the back of a bag of heath bar bits. So simple. But I started playing around over the years, adding spelt flour to make them fluffier and melt in your mouth, and scaling back on the sugar, and up on the cocoa. Now they are a masterpiece! You can either eat them plain as cookies, or at a dinner party they make a fun dessert when they are still slightly warm, served with a scoop of vanilla ice cream. If you don’t like heath bars you can substitute whatever other chunks you like (white chocolate chips, chocolate chips, nuts, etc.) Warning… they will not last long.
