Hot Turkey Mousse

Why is this recipe great? What’s its backstory? 

A great left-over turkey dish.  It’s pretty easy.

Hot Turkey Mousse

Serves 4. Takes approx. 20 minutes.

Ingredients:

3 tbls butter or margarine

3 tbls flour

1 cup milk

salt & pepper

1.5 cups of minced left over turkey

½ cup minced cooked or canned ham. (I usually use all turkey)

½ cup soft bread crumbs, 2 eggs.

Instructions:

Melt butter or margarine. Blend in flour. Gradually add milk; cook over hot water stirring constantly until thick. Season with salt and pepper. Cool slightly; add turkey (and ham if using) and breadcrumbs. Beat eggs; add. Pour into individual greased moulds. Place in pan of warm water. Bake in moderate oven (350 F) 45 minutes or until inserted knife comes out clean.

Double recipe for ring mould.

  1. There’s an error in the time. It takes about an hour and 20 minutes I think. I haven’t made it for a while.
