Turkey Stroganoff

Why is this recipe great? What’s its backstory? 

Another great leftover turkey recipe.  I scribbled it down at speed from a tv recipe.

Turkey Stroganoff

Takes approx. 30 minutes (and however you cook your rice).

Ingredients:

Sliced cooked turkey cut into pieces

Onion

Sherry

Sherry vinegar

Dijon mustard

Chicken stock

Corn flour

Crème fraiche or cream or yogurt.

Parsley sprigs to garnish.

Instructions:

Soften onion in butter. Add cooked turkey – cook a bit.

Add salt, pepper, Dijon mustard, then sherry vinegar and a little sherry and turkey or chicken stock. Cook for a while.

Add corn flour (dissolved in water). Stir and cook until slightly thickened

Add cream or whatever. Taste and adjust seasoning if necessary.

Serve over rice. Parsley sprigs.

Source: I wrote it down in haste from the tv. Sorry – no measurements – just go by your own judgement depending on how much turkey you are using / how many people you wish to serve. I’ve never measured anything with this one and it’s always turned out great!
