Yellow Leek and Pork Spring Roll
Serves 4. Takes approx. 30 minutes.
Ingredients:
1/3 lb. Chinese yellow leek
1/4 lb. grounded pork
1/2 teaspoon salt and a pinch of sugar
1/2 tablespoon corn starch
16 spring roll wrapper
Instructions:
- Chop leek into small bites, mix it with grounded pork in a large bowl
- Add 1/2 teaspoon salt, a pinch of sugar, and 1/2 tablespoon corn starch into the filling and mix evenly
- Thaw frozen spring roll wrapper at room temperature and get one sheet at a time
- Put 2 tablespoon leek and pork mixture on the center of the wrapper diagonally
- Fold it like an envelope and use water to help glue the edge
- Use a small cooking pot, add oil to 1-2 inch deep. Use medium heat to heat the oil
- Place spring rolls (the number depends on the size of the frying pot) to the oil, fry 1-2 minutes or until the bottom side turns golden color, flip to fry the other side for 1-2 minutes or until it turns golden color
- Take out and put to a plate, let them cool down a little bit, serve fresh.
