Why is this recipe great? What’s its backstory?

Chanukah isn’t Chanukah without this dish! This COVID-19 year, due to the fact that we couldn’t celebrate Thanksgiving with the grandchildren, we actually served what would have been the Thanksgiving turkey at our Chanukah get-together—with Latkes as a side dish, instead of mash!!

Potato Pancakes (Chanukah Latkes)

Serves 4. Takes approx. 30 minutes.

Ingredients:

2 medium potatoes – grated
1 small onion – grated
1 egg
2T. flour
salt & pepper
vegetable oil for pan-frying

Instructions:

Combine the grated potatoes, grated onion, beaten egg, flour, salt & pepper (to taste). If the mixture is too wet to form pancakes, add a bit more flour. Using a spatula and frying pan, press into flat thin pancakes and fry in hot vegetable oil till brown and crispy on both sides. Of course, you may adjust the thickness of the pancakes according to your preference. Serve with applesauce and sour cream on the side! (Pancakes can be kept warm in the oven for up to 30 minutes).
