Cranberry-Orange Relish

Why is this recipe great? What’s its backstory? 

It’s pretty simple, it can be made in advance and it makes a refreshing balance to a rich festive meal. It’s great with turkey sandwiches and other turkey leftovers.

Cranberry-Orange Relish

Serves 12 with plenty left over . Takes approx. 45 minutes

Ingredients:

400g fresh cranberries
3 or 4 large sweet oranges
200g castor sugar

Instructions:

Pick over cranberries and chop in a food processor

Pare the rind from oranges, being sure to cut away outer white pith. Cut up oranges into small pieces and add them and any juice to the cranberries.

Add some finely-grated orange rind – about a tablespoon

Add the sugar and stir.

Refrigerate for 24 hours or longer. Stir again before serving and add more sugar if you think it is necessary.

I think I got this from a packet of cranberries decades ago and I’ve made it every Thanksgiving and Christmas since.
