An easy and healthy breakfast for a lazy Sunday morning. And for the not-so-lazy people: energizing food especially before or after a Sunday run!
Healthy Banana Pancakes
Serves 2-3. Takes approx. 15 minutes.
Ingredients:
4 eggs
2 ripe bananas
blueberries
oats
maple syrup
butter/coconut oil
Optional: cinnamon, other fruits, nuts, peanut butter (100% peanuts)
Instructions:
Mash the bananas with a fork and mix them with the eggs in a bowl.
Add some cinnamon, oats and blueberries (to taste).
Heat a pan with butter or coconut oil, medium heat.
Pour some of the banana mixture in the pan (just like regular American pancakes).
Cook until both sides of the pancakes are golden brown.
Serve hot, preferably with other fruits, nuts, maple syrup.
Also very tasty with peanut butter.
