Onion Quiche

Why is this recipe great? What’s its backstory? 

My husband Gérard loves anything with onions and kept after me to make him this quiche from Alsace Region in France. We both liked the result and now make it often. Few ingredients and fast to make. Peeling and slicing the onions bring tears to my eyes!

Onion Quiche

Serves 6. Takes approx. 45 minutes.

Ingredients:      

  • 1 recipe for pie crust homemade or store – rolled out to fit a pie pan.
  • 1kg sliced onions
  • 20 cl crème fraîche (1 cup sour cream)
  • 2 eggs
  • Salt and pepper
  • 75 g of raw bacon bits (lardons)-optional

Instructions:

Oven Temperature: 210°C

  1. Peel and slice the onions.
  2. Melt butter in a casserole and add onions and bacon (if using) and cook until onions are translucent.
  3. Blend the 2 eggs and creme fraîche, add salt and pepper, then add the cooked onions
  4. Pour the onions mixture into the prepared pan. Bake for 30 mins.
  5. Serve hot.
