Why is this recipe great? What’s its backstory?
This recipe came from one quarantine afternoon, when my husband and I were scavenging for something sweet, but we hadn’t been shopping in a while and we didn’t have much available. I had one bar of dark chocolate so googled around, and found this recipe. Tweaked it based on the ingredients I had available, and I couldn’t BELIEVE how easy it was. It took so little time I whipped it up while on a conference call, and we were so happy when we tasted it. Since then, we’ve been making it twice a week- guilty pleasure.
And overall… it’s healthy!!
Secret Ingredient Chocolate Pudding
Serves 4 small portions, 2 medium portions. Takes approx. 10 minutes
Ingredients:
400 silken tofu
100g dark chocolate
2-3 tablespoons maple syrup (depending on how sweet you like your pudding)
Instructions:
- Put the tofu and the maple syrup in a blender and blend until silky smooth
- In the meantime, break up the chocolate pieces and melt in the microwave (or on a double boiler if you have the patience)
- Slowly pour the melted chocolate into the blender while blending, and keep blending until its really smooth
- Put in ramekins if you are 4, or bowls if you are 2, and put in the fridge for at least 20-30 minutes
