What\u2019s its backstory?&nbsp;<\/h5>\n<p><span style=\"font-weight: 400\">I originally made this recipe to bring along to a house party in the Lakes District to celebrate a dear friend\u2019s 60<\/span><span style=\"font-weight: 400\">th<\/span><span style=\"font-weight: 400\"> birthday. They were so well received, they have become a holiday staple, taking them along to other friends\u2019 family Boxing Day open house or one of the many different types of cookies I make just for us at home during Advent. They make for a refreshing change from the incessant chocolate! <\/span><br \/>\n<!--more--><\/p>\n<h5>Orange Butter Cookies<\/h5>\n<p><i><span style=\"font-weight: 400\">Makes 48 cookies. Takes approx. 1 hour.<\/span><\/i><\/p>\n<p>Store in airtight containers up to 1 week.<\/p>\n<p><span style=\"text-decoration: underline\">Ingredients:<\/span><\/p>\n<p>1 \u00be cups all-purpose flour<br \/>\n1 \u2154 cups cake flour or more all-purpose flour (cake flour gives a finer texture)<br \/>\n\u00bd tsp baking soda<br \/>\n1 tsp kosher salt<br \/>\n1 \u00bc cups granulated sugar<br \/>\n1 cup (240g) cold unsalted butter<br \/>\n2 packed tsp freshly grated orange zest<br \/>\n1 large egg plus 2 large egg yolks, at room temperature<\/p>\n<p><strong>For the icing:<\/strong><br \/>\n1 orange<br \/>\n1 \u00bd cups confectioners\u2019 sugar<br \/>\n2 to 4 Tbsp whole milk<br \/>\n2 drops almond or vanilla extract<br \/>\nPinch fine salt<\/p>\n<p><span style=\"text-decoration: underline\">Instructions:<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Position 2 oven racks in top and bottom third of oven.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Preheat oven to 350 degrees.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Line two cookie sheets with parchment paper.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In bowl, whisk flours, baking soda and salt together.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In mixer, cream together sugar, butter and orange zest at medium speed until light and smooth, about 3 minutes. Scrape down sides of bowl frequently.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add egg and mix.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add one egg yolk and mix.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add remaining egg yolk and mix.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Stir in dry ingredients just until combined.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Scoop Tbsps of dough onto parchment, leaving more than 1 inch between cookies.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Press each one down lightly with 2 fingers to flatten to thickness of 1\/2 inch. Leave any ridges and valleys on top of cookie intact, but smooth edges.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Bake about 15 minutes, rotating cookie sheets halfway through. Cookies should be pale but baked all the way through.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Cool on sheets 5 minutes, then transfer to rack and cool.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-weight: 400\">For the icing:&nbsp;<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Bring a small pot of water to a boil.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Peel orange, being careful to remove only outer orange zest, and cut into thin strips.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Blanch in boiling water 1 minute; drain.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Sift confectioners\u2019 sugar into bowl.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Whisk in 2 Tbsp milk. Whisk in more milk if needed to make mixture thin enough to spread.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add extract, salt and zest, and whisk to combine.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Place cookies on rack and drizzle icing over each one (make sure there is some orange zest in each spoonful).
