What\u2019s its backstory?&nbsp;<\/h5>\n<p>This the very first dish that all Chinese people learn from their moms.<\/p>\n<p><!--more--><\/p>\n<h5>Mama\u2019s Tomato Fried Eggs<\/h5>\n<p><em>Serves 1-2. Takes approx. 10 minutes.<\/em><\/p>\n<p><span style=\"text-decoration: underline\">Ingredients:<\/span><\/p>\n<ul>\n<li>Eggs 3<\/li>\n<li>Tomatoes 3&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;<\/li>\n<li>Green Onions (cut into small pieces)<\/li>\n<li>Salt 1 teaspoon<\/li>\n<li>Sugar 1 to 2 teaspoons<\/li>\n<li>Water &#8211; a cup or 200 ml<\/li>\n<li>Ketchup (optional)<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline\">Instructions:<\/span><\/p>\n<p>Break the eggs in a bowl and mix them. Cut the tomatoes into small pieces.<\/p>\n<p>Pour oils in a pan at high to medium high heat and fry the eggs until bubbles come up then put them aside in a plate.<\/p>\n<p>Use the remaining oil (add a little if necessary) to fry the tomatoes until they are soft.<\/p>\n<p>If smokes come up, lower the heat to medium but ideally keep the heat high until the tomatoes are soft.&nbsp; Add a little water &#8211; enough to cover the tomatoes \u2013 and stew the tomatoes, also adding salt and 1 spoon ketchup (if using).&nbsp; Later add the sugar for flavor.
