What\u2019s its backstory?&nbsp;<\/h5>\n<p>Every week during the COVID-19 pandemic we have been hosting a Virtual M&amp;Cs, where alums from all around the world can gather to share how their weeks\u2019 have gone and have discussions on topics that interest the group. With each week\u2019s facebook reminder, I always post a cookie recipe that people can make at home. We had lovely feedback from both people who joined the M&amp;Cs and those who tried the recipes on their own that this shortbread recipe was delicious, so I wanted to share it with all of you. Enjoy!<\/p>\n<p><!--more--><\/p>\n<h5>Shortbread<\/h5>\n<p><em>Makes 16 cookies. Takes approx. 20 minutes.<\/em><\/p>\n<p><span style=\"text-decoration: underline\">Ingredients:<\/span><\/p>\n<ul>\n<li>10 tbsp unsalted butter unsalted butter, at room temperature 142g<\/li>\n<li>1\/2 cup confectioners&#8217; sugar<\/li>\n<li>1\/2 teaspoon pure vanilla extract<\/li>\n<li>1 1\/2 cups all-purpose flour 180g<\/li>\n<li>1\/2 teaspoon kosher salt optional<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline\">Instructions:<\/span><\/p>\n<ol>\n<li>In a stand mixer fitted with a paddle attachment, beat butter and vanilla extract until creamed.<\/li>\n<li>Add confectioners sugar and salt; mix until combined.<\/li>\n<li>Scrape bowl down and add flour while beating on low. Scrape bowl once more and mix until combined.<\/li>\n<li>Shape the dough into a rectangular prism, wrap in plastic and chill until firm. At least an hour.<\/li>\n<li>Preheat oven to 350F (177C). Use a sharp knife to cut 1\/2 inch thick slices<\/li>\n<li>Place slices, spaced at least an inch apart onto a baking sheet lined with a silicone mat or parchment paper.<\/li>\n<li>Use a fork or skewer to indent a pattern onto the top.<\/li>\n<li>Bake for about 10 minutes, rotating baking sheet in the oven halfway through.<\/li>\n<li>Transfer to a wire sheet to cool.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline\">Notes<\/span><\/p>\n<p>The cookie dough can be made well in advance. It keeps for about a week in the fridge and a month in the freezer. Make sure to wrap very well and allow to warm up just enough to cut.<\/p>\n<p>If your butter isn&#8217;t room temp just cut the sticks into a few slices and microwave on 50% power in 5 second bursts.
