Why is this recipe great? What’s its backstory? 

This is a traditional Bulgarian salad. It is similar to Greek salad but Bulgarian feta cheese tends to be softer. It is also usually crumbled in the salad.  The name Shopska is the old name of the Sofia region.

Shopska Salad

Serves 4 Takes approx. 15 minutes.

Ingredients:
2 big tomatoes
1 cucumber
1 pepper
Parsley
Olives
Bulgarian feta cheese
Olive oil
Vinegar
Salt

Instructions:

Cut the vegetables and crumple the Bulgarian feta cheese and sprinkle it on top. Add the olives and parsley on top. Add olive oil, vinegar and salt depending on taste. Enjoy!
